Asparagus

Fresh Local Asparagus — Mooresville NC

Asparagus is in season now at Carrigan Farms. We grow four acres of fresh asparagus in Mooresville, NC — one of spring's first vegetables and one of our favorites. The season is only six weeks long, so don't wait. Every spear is hand harvested each morning by snapping it off at the ground.

We love asparagus lightly steamed with butter and salt, in a breakfast omelet with Jarlsberg cheese, or grilled and drizzled with balsamic reduction and fresh parmesan. More recipes are on our blog.

Asparagus is one of the few vegetables that comes back year after year without replanting. At Carrigan Farms, our asparagus beds have been producing for years in the rich Piedmont soil of Iredell County. Fresh asparagus from the farm has a sweetness and snap that grocery store asparagus — picked days earlier and shipped hundreds of miles — simply can't match.

If you've never had truly fresh asparagus, this is the place to try it. We sell out most days, so coming early is recommended. Asparagus pairs well with eggs, pasta, grilled meats, and spring salads. It's high in folate, fiber, and vitamins K and C — a genuinely healthy spring treat.
